Purple corn, once a staple of the Incan empire, is botanically the same species as regular table corn but has a deep purple color, and has long been used by people of the Peruvian Andes to color beverages and food. Most commonly, maiz morado is used to make both alcoholic and nonalcoholic versions of a popular beverage called Chicha Morada.

The dark purple color is due to natural pigments known as anthocyanins, which are rich in antioxidants. Purple corn has a higher antioxidant capacity than blueberries, which is leading many to put purple corn in the category of super foods. The antioxidants found in purple corn have anti-inflammatory abilities and encourage connective tissue regeneration. Studies also indicate that they reduce the risk of cardiovascular disease, inhibit abnormal cell growth, promote collagen formation, and improve circulation.

Quinoa (pronounced keen-wa) is a species of goosefoot that originated in the Andean region of South America, where it has been an important food for 6,000 years. This wonder plant, along with corn and potatoes, is a major food staple for the Andean cultures. The Incas considered Quinoa sacred, referring to it as "chisaya mama" or "mother of all grains".

In contemporary times, quinoa is highly appreciated for its nutritional value. Its protein content is very high (12%–18%) and unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it a complete protein source. It is a good source of dietary fiber and phosphorus, and is high in magnesium and iron. Quinoa is naturally gluten-free and is considered easy to digest. Because of all these characteristics, quinoa is being considered a possible crop in NASA's Controlled Ecological Life Support System for long-duration manned spaceflights.

Quinoa flour is used for making breads, biscuits, cookies, crepes, muffins, pancakes, tortillas, and even beer. It may be used on its own in some baking, most commonly in breads or flat breads, or combined with other gluten-free flours, such as rice flour, to create a lighter baking mix. Since quinoa flour does not contain gluten, when you are making your favorite recipes like risen breads and pie crusts, you should substitute up to 50% quinoa flour in your recipes. The Hatch chile is not actually a distinct variety of chile. It belongs to a group of long, green, mild Anaheim-type chile peppers that are especially prized for their superior quality. This pepper has a short season of only six weeks, and is harvested during late July and August. The fruit appearance is long and curvy and the pods range from 4” all the way to 12”. They are firmer than the Anaheim variety and have a greater range of flavor. They have a wonderful smell in their raw state and are wonderful when roasted.

The Hatch Valley is in Doña Ana County, New Mexico, United States. It is located just off Interstate 25 about 40 miles northwest of Las Cruces, NM and approximately 80 miles northwest of El Paso, TX.
