We do have three different tuna offerings. They are all exceptional, they are all Bonito del Norte, so how do you choose? For your basic tuna needs, the Arroyabe is what you are looking for. Wonderful flavor, great for every tuna dish you can imagine. Looking for that extra little "WOW!"??? Go for the Ventresca tuna belly. It is the softest and most delicate part of the fish. It presents a much lighter and sweeter palate than the rest of the flesh of the fish, and is considered an exquisite delicacy. And then we have the loins. While the others are small pieces of tuna, the loins are large, whole pieces. There are two or 3 loin pieces, each 2.5 inches long, in every jar. These are wonderful cuts of Bonito del Norte Tuna loins are cooked in seawater and packed in olive oil less than 24 hours after being caught in order to keep them moist and flavorful. They are left to mature for at least two months before they are shipped to us. The flesh of this fish is delicious, juicy and has an impressive consistency.

Bonito del Norte is found in the coastal waters of the Bay of Biscay in the Basque region of Spain during the summer season when they come north to dine on the Cantabrian Anchovy. These exquisite anchovies, packed in the finest Spanish olive oil, are hand-packed according to traditional methods using carefully selected fresh fish harvested off the Cantabrian Coast in northern Spain.

The anchovy, a traditional food of the Basque Country, is a mainstay of this region's fishing economy. The Spanish name "boqueron" comes from the size of the anchovy's mouth or boca, which is large in proportion to the rest of the body. Anchovies are typically harvested in the spring when they accumulate the most fat and flavor. Small nets are used to protect the quality of the fish and reduce by-catch. Once caught they are gutted, placed in barrels with salt-layer separations, and weighted. Once the fish has matured, about 3-7 months, it is washed to remove bones and skin, and canned with high quality olive oil.

Anchovies are high in Omega-3 fatty acids which help in the prevention of cardio-vascular disease and reduce cholesterol. They are also rich in iodine, calcium, Vitamins A, D, B12, B6, B2 and unsaturated fatty acids such as linoleic acid.

Do NOT be fooled by other sardines. Conservas de Cambados makes a "Gourmet" line, which is their highest quality and the ONLY ones we carry. "Gourmet" is clearly at the top of the front label as shown in the photo. Their other line "Bogar/Alamar" is made with imported seafood (not from Spain) or with lower quality seafood from outside Galicia.

When in doubt verify the front label says "Gourmet" at the top, "Made in Spain by CONSERVAS DE CAMBADOS, S.A. FDA 15066" at the bottom, the and that the back label has the UPC across the bottom horizontally, not along the shorter vertical side of the tin.

These tiny Calico scallops, also known as Zamburinas, from the Galician estuary in northern Spain, are gently sauteed in a delicate tomato, onion, sunflower oil, salt, and special spice sauce.
